Roasted sweet potatoes are in my top five favorite items to cook. I find sweet potatoes to be a good introduction into other vegetables. They have flavor but not enough to be off putting, they are the right amount of earthy and sweet, and they can be cooked in numerous ways. This sweet potato salad is less of a recipe and a sort of guide for a grain based salad that I eat nearly every week. This cauliflower pasta is a riff from this Brussels Sprout pasta. Lemon and cream may be my favorite easy pasta sauce but I know that quite a few of your are always looking for more vegan options. Thus, this cauliflower version was made. I keep a supply of unsweetened almond milk in the refrigerator for afternoon lattes and the occasional bowl of oatmeal. The right almond milk can provide quite a bit of flavor to a meal and this pasta dish is good evidence to that. The slight nuttiness plays right in with the lemon and the cauliflower making this a comforting vegan bowl of pasta. Given this whole month revolved around lunch, it felt right to finally share my recipe for egg salad. For the longest time I shied away from mayo-based salads but over the years, they’ve grown on me. The key, I’ve found, is just enough mayo to hold the salad together and not a scoop more (plus lots of herbs). Better yet? I made this ramen bowl with eggs for dinner, cooked a few eggs for a little longer, and made egg salad for the next day- it’s a win/win situation! Read more and see the recipe.

Of all the dinner/lunch pairings I’m sharing this month, this cauliflower wrap is my favorite. I’ve mentioned before how I love the combination of curry and cauliflower and this pizza is the best (in my book). I roast extra cauliflower for the pizza and save it to make a wrap/stuffed pita for lunch the next day. Add a little hummus (or even chickpeas) for protein and you’ve got yourself a meal. If you are not a beet lover, this beet pasta is not for you (but check below for a good swap). The beets are roasted whole, peeled, then pureed with a bit of cream, lemon, and dill to make a puree. The dill/lemon combination might seem a bit counter to most beet pairings but together, this pasta feels like a winter dish looking forward to spring. No month about lunch would be complete without sharing a recipe for summer rolls. Easy to make, once you get the wrapping part down, they can be made with unlimited ingredients. Wrap the finished rolls in a damp towel, stick in an airtight container, and be on your way. I’m usually tossing raw ingredients into rolls but these carrot summer rolls are one of my favorite. Every time I’m sick, I reach for ginger. Ginger in smoothies, ginger in soups, and ginger in noodle bowls. These ginger noodles were whipped up in a frenzy while M was asleep on the couch and Mack was napping for 20 minutes. It is a similar broth to that of this Bok Choy Soup but pulls a extra flavor. I like Napa cabbage, it’s a bit sweeter in flavor and melts nicely into the noodle bowl without having to cook for a long time. Read more and see the recipe.

I’m not a meal planner but I do try and work meals together. I’ve had to get creative with leftovers thanks to a husband that doesn’t always like them. Thus, an entire month of sharing recipes that can easily be made with dinner ingredients but are not direct leftovers. Continuing on with the theme of making dinner and having lunch ready for the next day, this turnip salad uses one of my favorite ways to eat this root vegetable: roasted. This particular salad is using the same turnips from this barley bowl. The turnips are roasted with sesame seeds, soy sauce, and honey which makes them just a little sweet which is great when paired with the earthiness of the quinoa/turnips.
